Happy THANKS-Giving

Moist turkey, secret revealed, protein rich cookies, sagey cornbread stuffing, all below

I love the story about Thanks-giving over at Abba Stories check it out
Feed a Hungry Family

Of course here at farm funnies you just never know what to expect, do you ?
Here is a recipe for some cookies, that I personally think the BIRD would enjoy more than I would.
I can do most things, but making this recipe ,even for the BIRD , finds me a bit squeamish just thinking about it.( Oh and we currently have 3 toms one hen and one juvie, and yes they are enjoying a peaceful THANKS-giving, chowing down on what else...mom "catered" meals, but definitely NOT these cookies:-)

I am sharing this recipe in the event some adventurous soul out there would like to try these, please do not send me any :-) YIKES! Actually, I came across this recipe while researching beardies and geckos diets, of all things.

OK, OK ,fun and my silly post aside, I will share our cornbread dressing recipe, below:

Now for the "yummy" for the BIRD cookies,

PROTEIN RICH COOKIES
1-1/4 cups flour
1 tsp baking soda
1 tsp salt mix the dry ingred.to blend
1 cup soft butter
3/4 cup sugar
3/4 cup brown sugar (packed) cream ( beat butter and sug's to creamy texture)
1 tsp vanilla
2 eggs beat in vanilla and eggs , add dry ingred
stir in
1-1/2 cups chocolate chips ( omit if making for "da" BIRD or any critter)
and TA DA (1/2 cup) crumbled dried mealworms*

* to dry DA BUGS...Place the cleaned and prepared mealworms ( not sure how one prepares these critters ) on a cookie sheet and dry in the oven 1 -2 hrs 200F
-----
Then preheat oven to 375F In a bowl, mix the flour, baking soda and salt. cream butter, white sugar, brown sugar, and vanilla. Stir in eggs. Gradually add the flour mixture. Stir in chocolate chips and mealworms. Drop by teaspoonfuls onto a cookie sheet, and bake 8- 10 minutes.
-------
Here turkey turkey turkey...gobble,gobble,gobble

a handsome royal palm fella,
a pair of equally handsome bronze's, struttin' their "stuff" CORNBREAD STUFFING
o k ...now for the corn bread stuffing,
fair warning... this is "bad" ( well currently "politically" incorrect, a number of years ago, it was good for your survival)
I save the drippings from the BIRD and since it is only once a year use it
for the "juices" for the stuffing, very rich and very tasty, very "bad" but hey

as mentioned, our hunter ,gathering forefathers would have used this kind of cooking to keep weight on for those long cold winters for SURVIVAL, so much the better if they started the winter with a feast that put on a few pounds. By spring those extra pounds , were most likely GONE, if not they worked themselves off ,getting the ground ready for spring planting, or from choppin'/carrying wood and of course chopping and melting and a packin' ice for water for kids kin and critters alike. ( hey I have to break ice an/or pack water in the frozen times too, just a part of the critter health benefits,
why it's like having your own private "gym" work out and it's FREE :-) and the "audience adores every move you make, no matter how you look.

I make my favorite cornbread recipe , I often grind dried whole corn kernels into corn meal with a stone grinder. ( or you can "cheat" and buy a cornbread mix or even a bag of cornbread crumbs,

I use real butter to saute' chopped onions and often green onions as well ( I don't use celery, but here you could add about a cup or so and saute' it too, a very L-o-n-g- story , hubby who is easy to please? won't have celery in anything, nor eat fish, beets, ready made salads,or those roasted chickens, I think you see a trend here, umm but he's not fussy ? Oh well ,he's still a keeper :-)... I don't like sauerkraut so perhaps that makes us even?

I use chicken bouillon cubes for broth, especially if I forgo the drippings,
poultry seasonings(about 2 tsps , sugar (splenda) aprox 3-4 TBSP and sage 3 tsp or so to taste , I do stir the speasonings , especially the sage into the butter and drippings, it lets more of the flavor "out'
sorry no real measurements here, I generally double a cornbread recipe a day or so before making my stuffing, I several squares of fresh cornbread one each for hubby and I to enjoy one square with butter with a simple meal of soup , beans, chili or ? and for an evening meal of cornbread in a glass of milk, really it is very good.
Of course these recipes are only for those who are not doing our 5&1, ( I do have some recipes for holidays if you are)
I use 1 or 2 cubes of butter, depending on the amount cornbread, which I crumble by hand
into a course meal like texture in a big steel bowl.
Then I add the butter, onion(and celery) and the drippings, and bouillon broth to make a very moist dressing, I put this in a casserole or loaf pan and bake for about an hour. (covered with foil) with the turkey.

Oh, here is a super moist TURKEY SECRET...preheat your oven to 450 degrees, for 15 min. then ,place a tent of foil over your turkey. a bit snugger over the legs (do not seal, just drape and fold a bit to cover the top of the bird, return to the oven, in a few min lower the temp to 325 and finish roasting for the remaining required time for the size of bird you have.

Happy huntin',bakin'stuffin'chopin'munchin'and well CRUNCHING on those cookies ...I double dog dare ya! And of course giving... be sure and check the link to Abba Stories, and my merry heart post about giving,

Especially have a blessed THANKS-giving
